I have a piece that will be used inside my apartment. Do I need to seal it more than once?
(It is a storage box, and I have company coming soon and I'd love to use it right away to make my messy corner of the living room look more clean.)
So, I guess what I am asking is that is it necessary or good practice to varnish an indoor project more than once?

You won't need marine varnish for an indoor project. You would be much better off using a polyurethane varnish as this will give a tougher, more durable protective coat. It is always a good idea to use 2/3 coats with any varnish. Not my favourite job, varnishing! I usually try to do it outside because of the fumes.

Oops, I didn't know I was going overkill with an indoor project. (*blushes*)
So, I need a polyurethane varnish instead? Gotcha. I'll make sure to use that from now on.
I wish I could do it outside, but it is -29 here with the wind chill factor today!

Jackie's correct. And make those 2 or 3 coats THIN coats, or it will take forever to dry.
